The greatest SYV Cabernet we have yet to produce, the 2018 balances its power and intensity with great texture and structure. Loaded and complex with aromas and flavors of cherry, cassis, roasted herbs, chocolate, vanilla, and earth, the 2018 has amazing balance and length, with great acidity and very ripe smooth tannins. A knockout!
Notes of cherry, cassis, roasted herbs, chocolate, vanilla, and earth.
− Made with five different clonal selections – 15, 337, 341, 412 and 8 – on multiple
rootstocks and 5 different Los Olivos District vineyards.
− Individual vineyard lots were destemmed, hand sorted, and gently crushed before cold soaking for 48 hours to extract color and taste-enhancing phenolics.
− Fermentation took place in open tops for a period of 10-14 days, depending on the lot.
The caps were punched down by hand twice daily. After fermentation, the free run wine
was drained to tank and racked to barrel.
− Grapes were then basket pressed and bladder pressed depending on lot.
− The wine underwent spontaneous malolactic fermentation in barrel to integrate fruit
and oak character.
− Aged 18 months in 30% new French and American oak, 70% seasoned and neutral oak
“The 2018 Cabernet Sauvignon (Santa Ynez Valley) is rich and explosive out of the glass. Inky dark fruit, grilled herbs, leather, licorice and a host of earthy notes flesh out in an expansive wine endowed with tremendous depth and complexity. This is such a gorgeous Cabernet Sauvignon.” –94 Points, Vinous
“Intensely dark berry aromas meet with earthy minerality, black olive and savory charred meat elements on the nose of this bottling. The complex palate pops with fresh blackberry and boysenberry flavors, which are wrapped in thick tannins but lifted by accents of elderflower and lilac.” –94 Points, Wine Enthusiast
