Bossa is a “washed-rind” cheese. This cheese is literally washed with brine (salt water, sometimes with added cultures) as it ages. Washed rind cheeses have a pungent aroma, and are the epitome of the classic, and well-loved “stinky” cheeses. Bossa has a very complex flavor profile that includes meaty flavors, like beef broth or bacon, herbal grassy notes, floral elements, buttery and nutty flavors and a slight but well balanced bitter note.
