By soaking each wheel of cave-aged blue cheese in an organic red wine blend, we create a cheese with distinctive berry notes and a brown butter finish – in addition to a subtle rose blush coloring on the rind. This cheese is made in a convenient “mini wheel” format that is perfect as the centerpiece on a cheese and charcuterie platter.
Appearance: Ivory, with green-blue veins of mold throughout the interior. The rind is grey-brown with hints of pink.
Texture: Rich, buttery, and smooth
Taste: Currant, blackberry, blueberry, and brown butter, with moderate “blue” flavor
Suggested Pairings
- Caramelized pecans stuffed with Bluehorn Blue cheese and a balsamic honey glaze make a crowd-pleasing appetizer – one of Rogue Creamery’s favorite recipes. Bluehorn Blue is also a wonderful accompaniment to steak, pork loin, or duck confit drizzled with a bordelaise sauce. Because of its convenient, attractive size, Bluehorn Blue is a perfect centerpiece on a cheese platter, surrounded by nuts, fruits, and charcuterie.
- Bluehorn Blue pairs excellently with a variety of red wines, including Syrah and Pinot Noir. We also enjoy it with dessert wine, especially Ruby Port. With flavors of caramel, vanilla, and cream, wheat ales and porters will complement this cheese as well.
