The 2019 Cabernet Sauvignon is not for the faint of heart. On the nose, notes of blue fruits, blackberry, and cassis are the driving force. Flavors of plum, black cherry and chocolate explode on the palate with enough structure to keep things serious. The mid palate’s rich fruit flavors and luxurious texture make this Cabernet Sauvignon an absolute pleasure to drink.
A mild and steady growing season was interrupted only by a sustained mid-summer heat wave, allowing for excellent hang time in the end. The grapes were harvested over a two week period from October 9 through October 24, 2019. After destemming the clusters, Director of Winemaking Jeremy Leffert and his team fermented the fruit in a combination of 10-ton stainless steel tanks, fourton concrete fermenters and large oak tanks. After seven days of warm extraction, the new wine was pressed off the skins and into stainless steel tanks to finish fermentation, a maneuver designed to maintain a pure tannin profile while avoiding any uptake of phenolic astringency.
